So Lao Ma Ban Mian is a brand of instant noodles from Tainan, and now there are a couple of restaurants in Singapore under that name. There were quite a few varieties available, but I stuck to the traditional noodles in that chicken broth above. The broth was clean and savory, and accentuated with a very aromatic Shaoxing Huadiao huangjiu. Broadly speaking, the food reminded me a lot of Shuang Yue given the very big cuts of meat and veggies. It made it more rustic but more difficult to eat.
