We finally had a chance to try this chain from China at Midtown House near Bugis (120 Beach Road #01-01, 6550-2335). They literally translated their tagline into an unappealing "boiled fish," but obviously they were talking about shuizhuyu. Those chili peppers were smoky and sat in a rich oil that was neither overpowering nor oversalted. The fish quality was good too, even if still a far cry from Shisen Hanten. I would like to see how their other menu items fare, including not just their suancaiyu and ganbian sijidou, but also their "marbled beef" mapo tofu.
