The Butcher’s Dining on Havelock Road

Boksoondaga Hand Makgeolli x Bossam

Not to be confused with The Butcher's Wife, this is an upscale Korean market and cafe sitting on the former grounds of EVERY (593 Havelock Road #01-03, 6970-3898). Think of something like The Providore, albeit Korean. And the kitchen is run by a former Daniel Boulud and Meatsmith chef. The menu was limited, but I didn't need to look any further than the first thing on the menu, which was this tender and rich sliced bossam pork belly paired with a deliciously easy to drink makgeolli from Ulsan. I'll be happy to come back, although more likely for some of the more affordable items on the menu, like the cheeseburger featuring buns from Burnt Ends as well as the craft beer cans that I saw on display.
