Not to be confused with Hainan nor Hunan, Huainan is a city in Anhui province in China and this stall at Lau Pa Sat serves beef noodle in that style (18 Raffles Quay #01-33). It was a bit like Lanzhou beef noodles with a clear broth, but was less earthy and instead with a clean salty flavor cutting through it. That brown toothpaste-like chili sauce on the side was nice and smoky, and the beef was sliced thinly. I liked this a lot more than I thought I would, even if the noodles were overcooked. Next time I should ask her for a fresh shaobing, as she gave me one that had been sitting around for a while despite her making another batch in front of my eyes.
