Here was a random ramen shop with many outlets across Japan serving a decent tai soba with a crisp broth, firm noodles, and delicate garnishes. It was only afterwards that I realized that I technically already tried this when Tampopo Singapore was serving it briefly. Well, I was happy enough with seeing something that looked very high end and yet was in a commercialized food court.
