Dian Mixian at China Square Food Centre
There is a stall across from the Biang Biang Xian Famous Foods outlet at China Square that is doing rice noodles from Yunnan (51 Telok Ayer Street #01-03). It's not just the round rice noodles that one usually sees, but also an option for ersi noodles, which apparently are very unique to Yunnan.
See, ersi are square-shaped and firmer than the more common round ones, as the latter is apparently made from ground rice while the former is cut from blocks, if I read it correctly.
Granted, I couldn't really taste much of a difference, and the way that they dressed these noodles was so mild that I really had to load up on the condiment bar on the side to make it edgier. But the noodles themselves were interesting enough that I've come back just to try them again.
