
Tonkotsu is an odd choice at Sanpoutei, but it is one of the few bowls of theirs that I haven't tried yet. Plus, I was wondering what the heck "W Soup" was. The first thing that came to my mind was the hotel chain, but clearly that wasn't it. It turns out that "W" means double in Japanese, and in this case, the broth was a blend of tonkotsu and tori broths.
It was edible enough to finish, especially given the attention to quality that these guys continue to put into their ingredients, be it the smoky and fatty chashu or gooey and savory egg. But it just didn't sit right with their thick and wavy noodles, even if I liked their chewy texture. Next time I'll go for the cheaper seabura or maybe try something from their nearly halal (i.e., not certified but friendly) menu.
