Phở filet mignon rare steak with a side of torched Kobe steak

It's pretty cool to see more progressive interpretations of phở lately, like cowboy brisket pho as well as my favorite wok-fried beef pho. And now there's a shop (2465 Alvin Avenue, 408-300-1045) that gets its beef from Snake River Farms, serving rare slices of filet mignon as well as options for torched Kobe beef, the latter of which is on the small plate in the foreground.

That little plate wasn't as great as it sounded though, as it was a bit dry after torching, and also laced with a sweet marinade. The broth was surprisingly salty and didn't have much body despite all of the aromatics in there. Well, we finished it all (and I'm glad that they had a béo hành scallion oil option to keep things fun), but I was kinda let down and would rather go to Pho 90 Degree instead.
