Miel de Agave in Chandler, Arizona

Sonora Tacos and Ribeye Aguachile

One of the things I wanted to get here in the Phoenix area was Sonoran cuisine, and in particular a local chili pepper called Chiltepin that is supposed to be quite potent. This shop in Chandler (325 South Arizona Avenue, 520-608-7651) was one that served it in the form of a ribeye aguachile, whose remnants are in the upper left-hand corner of the photo.

Yes, it delivered good heat by being pronounced but not excessive, and as part of an acidic bath with onions and even some crunchy bits on top, making it very much like an Isaan larb from Northern Thailand (apparently the crunchy bits were ground corn instead of toasted rice!). I was quite happy with it, as well as those Sonoran tacos next to it, which not only had some melted cheese underneath the meat to keep it fun, but also some amazing flour (!) tortillas.

I know that I'm always bashing flour tortillas, but this was a completely different beast. These were extremely thin and stretchy, unlike those lifeless bread-like things that one normally gets. Apparently there was lard involved, and it was awesome. If this is what flour tortillas would normally be like, then I'm all for it. But don't take away my corn either.
