
This was a random stall that happened to be open at Havelock Road Cooked Food Centre this morning (22A Havelock Road #01-06). I was struck by how different it was, in a good way. Instead of sauce-heavy places like 85 Redhill, this was very light on the seasoning, and yet still savory from those delicately textured and salted fishballs. Most importantly, the noodles were kept wonderfully firm. Apparently this shop has a long history and the gentleman has moved it around a few times; I'm not sure if he sold the business or just hired someone else to run it, but it was a lady operating it this morning. So I'm not sure if this was her adaptation of the recipe or if this is true to the original.
