I found another small chain of
paofan stalls. The broth here was richer than I was expecting, but it wasn't as savory as
Chao Ting, which to me is still the king despite all of the competitors that have popped up over the years. Why? Chao Ting gets the basics right, including not just the broth, but also the garnish, like the crispy rice and cilantro. Most other places, including Haoju, try to cram in a ton of seafood to make it look like a better value. But I'm in this for the broth, texture, and aromatics, not the protein.
