Bar-A-Thym by Francois Mermilliod (On Site This Time)

Oven Baked Snapper Loin Fregola, Chorizo and Lobster Emulsion

I finally made it out to Bar-A-Thym to dine there on-site this time. I grabbed this snapper from their lunch set, and it was so aromatic and savory that I was mopping up the remainder with bread after finishing that firm fregola pasta. I'm still a big fan of his food. Next time I'll have to try both the more cheaper quiche option as welll as the pricier omakase.
