Kuaile Xiaoyang has a new cut on their menu, with this one being from the chest area, if I heard her correctly. Just as with their other cuts, it's paper thin and crumbles apart a bit in the broth. But it's also one of the more deliciously rich and tender cuts that they have, and it's got just the right amount of stank to it too. Best yet, it's running at a promotional price right now, making it cheaper than any of the other cuts. The broth here is still unbeatable, BTW.
