Max's Kabisera in Bonifacio Global City, Philippines
Fried chicken is popular across Southeast Asia. But for some reason, there are a bazillion fried chicken places around my hotel up here in Metro Manila. And one of the most famous ones is a place called Max's. It's a 24 hour fast food chain, but they have a more upscale place called Kabisera on Bonifacio High Street, where the local team took me to lunch today.
The chicken was good, most notably because it was batterless, thus leaving the thin crispy skin to do the work (interestingly, the ketchup that you're supposed to eat it with is based on bananas rather than tomatoes, thus making it less tangy and more sweet). We also got kare kare, a peanut sauce-based stew that wasn't too exciting at first until I found the salty shrimp paste on the side to spike it with.
