Aburaya at The Test Kitchen Sing@pore
This "test kitchen" stall has been at China Square Food Centre for a while now (51 Telok Ayer Street #01-17). It's supposed to rotate through different Japanese concepts for short periods of time, alumni of which have included Ikkousha, Takumen, and a predecessor of Sakanadonya Kunimaru.
The current vendor is called Aburaya. Not to be confused with Aburiya, these guys focused on abura soba from Osaka. Well, that's what they claimed, but there were a lot of things that seemed to be locally inspired, including a sweet sambal, dark Chinese vinegar, and a bright red chili powder that you would otherwise find at a prawn noodle stall.
Anyway, you get to choose your toppings and seasonings, and fortunately I was able to get it to taste good enough to go back for a second bowl, especially with those firm and chewy noodles. Note to self: if you come back here, get a large bowl and remember to tell them not to put any sambal on it.
