
Believe it or not, the name of that dish above is "fried soup." And no, there is no soup. But it is pretty cool. It's a local dish from here in Maui composed of thick rice noodles called "chow funn" (yes, that's two n's) that are tossed in a wok. But those rice noodles are not the silky smooth ones that might come to mind; they were thick and chewy instead. Indeed, it reminded me a lot of Singaporean carrot cake in terms of both taste and texture, except that these were not made with turnips.
Anyway, this was from a gorgeous place hugging the beach in Lahaina where the sun sets against the impressively calm waters (1287 Front Street, 808-667-5400). They had quite a number of local items on the menu, including saimin, miso butterfish, and pohole salad. And that little squeeze bottle of "sambal" in the background was a lot better than the syrupy Thai-style stuff that I feared it was. Instead, it was potently sour and spicy while being earthier than a Louisiana hot sauce. Yes, I'd go back there again.
