It was easy to get a table at Youjian Chufang tonight, so we grabbed an assortment of chuanr, including those beef and pork ones above. They weren't anything that we hadn't ordered before, but I'm kinda jotting this down for my own reference next time.
In particular, the beef skewers on the left were surprisingly textured, with some pieces perhaps intentionally tough to provide a bit of bite along with a piece of fat sandwiched in the middle. That contrasted with the (non-pictured) mutton skewers, which were nicely grilled with more smokiness than mustiness.
That made the mutton my preferred choice, followed by the relatively neutral pork on the right side of the photo above. Either way, I was quite happy with the food tonight. I just need to remember to avoid the chicken next time given that it was mildly sweet and coated in a bit of corn starch or something.
