Ramen King in Singapore

Classic Tonkotsu Ramen Set

To be clear, this is not Ramen Keisuke Tonkotsu King. It's quite the opposite: it's a small chain of kopitiam stalls started by a former Santouka chef. There was an outlet at Changi Terminal 4 today, making for a quick and easy meal before getting on the plane.

No, I didn't particularly care for the food; the broth was rather tame, although I guess I kinda liked how the chashu was sliced very thinly. The more memorable thing for me was how the chain is kinda like Maruhachi or King of Fried Rice: kopitiam stalls doing more accessible renditions of food from more established shops.

Also, it was only now that I realized that Santouka closed its Singapore outlet a few months ago. It makes me kinda sad, especially since I didn't like the food from this shop enough to find it a suitable substitute. At least it was affordable, and it looks like they've been successful enough to have spread to several locations.
