I wasn't sure what the difference was between Ikkousha's standard
tonkotsu and the
shio version when I ordered it. But it became very obvious upon my first slurp: that salt made it so
bright and savory, and I loved it. The paper thin
chashu was fun, as were my extra hard noodles, even if I didn't care that much for the
menma. The tabletop pepper was nice and punchy, while the spicy
takana mustard greens had a nice stank to them. I've been taking
Ikkousha for granted for too long and really should go back more often.
