
A teammate of mine from China mentioned that his home town of Shantou specializes in these "hand shredded" ducks, and he gave me some from a brand called Pingyi to try. It's basically an entire duck that has been air-dried into a jerky-like state, and thus one has to use one's hands to slowly pull it apart and gnaw on the salty bits while discarding the bones. The skin is still attached, and it's marinated in things like soy sauce and anise seed, if I tasted it correctly. That makes it something that would accompany booze quite nicely, as long as one is mentally and physically prepared for the fact that it can be a pretty greasy hands-on affair.
