
One of the things that CHEFLAM's seems to advertise a lot is his hot pot, which interestingly featurs clear broth rather than a red one despite being "a Sichuan specialty." Conveniently for me, he does pre-cooked single serving bowls too. The beef was respectably tender and tasty, all while sitting in a savory broth with cabbage and glass noodles, with a potent dipping sauce and chili powder to help it all go down. Yeah, I liked it, even if the portion of beef was limited.
I also ordered those bamboo shoots in the background, as they only serve a limited quantity of just five portions per day. I wasn't sure what was so special about them though, as one couldn't taste much of the bamboo beyond the pickling. But it was interesting that they served it without cutting off the thick ends, making it a bit like eating an artichoke where the tough fibrous tips of the leaves have to be discarded after chewing off the tender portion underneath.
