We grabbed breakfast today at this shop near our hotel (27 Plaza de Bib-Rambla). And the churros were a little different in that they were kinda salty, and with a texture not unlike Chinese youtiao. I'm not sure if that is more of a local style, but the menu did feature a Madrid version too, if I read it correctly.
Perhaps more interesting were the ohter items, like the torrijas in the background. They were basically like French toast, with this one being spiced up with earthy cinnamon notes. The white beverage was actually my favorite: called leche rizada, it was kinda like a cinnamon milk slushie.
