This was a random stop, mainly because of an earlier discussion that we were having about bars sitting inside "caves" in Madrid. And this brick-lined place (13 Cava de San Miguel, 919-48-4243) was one of many cave-like places on this street along the walls of Plaza Mayor.
Our main objective was just for a drink, but they had food too, and thus I grabbed that
serving of callos above, featuring deliciously tender tripe. I am not sure how this compares to others around town, but I was happy to mop up the slightly peppery stew with some bread.
