Here's a
birria shop (3961 Snell Avenue, 408-281-8345) that says that its house speciality is
birria revolcada, which I think is where the meat is separately grilled with onions and a chili pepper. And yes, it was tender and rich, so much that it was better to eat it on its own without all of the ganishes. I was happy to eat it with those piping hot tortillas though, even if
the consomé was a bit of a bore.
