I've been very curious about Kausmo (1 Scotts Road #03-07, 8126-8538). It's part of that Les Amis block of restaurants at Shaw Centre, featuring an open kitchen and fixed menu that uses local ingredients with an emphasis on not wasting food. That means focusing on secondary cuts of meat as well as produce that didn't make the cut for retail sales due to their appearance. And on top of all of that, they do kombucha pairing.
Obviously, they aren't doing a dining service now, but their Krusty retail arm is selling baked goods, and this week they started these grilled cheese melts, which were awesome. The bread was key, and was greased up generously. Inside was deliciously gooey cheese, tender rillette-like brisket, and some pickles that were even laced with a bit of spice, making it all go down in the blink of an eye. Note that it has to be pre-ordered though.
