The Royal Dum Biryani by Chef Hamzah Haniffa
There are a bazillion briyani stalls at Tekka Centre, but this is one that I've been wanting to try for some time (5 Serangoon Road #01-252). Why? The sign said very prominently that they use olive oil. Really? I was very curious about what that would taste like; it turned out to be better than I thought it would be.
Granted, it was borderline dry in parts, and certainly wasn't as rich as a tradional ghee-fueled briyani. So while I'm not going to cravings for it like I do for Bismillah, it was edible and fragrant in its own right, and the mutton was tender enough to eat with a plastic fork. I just need to remember to pass on those sweet pickles next time.
