
A chain from Korea has opened an outlet in the back of 100AM in Tanjong Pagar (100 Tras Street #01-08, 6444-8516). The menu was pretty simple: just beef or pork. But they specialized in the latter, boasting of some kind of aging process that took "a decade of thorough experimentation." My curiosity was piqued.
They provided a rather unique array of condiments, including turmeric powder, fish roe, wasabi, and even some rock salt that you ground yourself with a mortar and pestle. They even had a "cocaine sauce" that they took a lot of pride in, even if it sounded rather hyperbolic. It turned out to be largely garlic and peppers in a sweet soy sauce base placed on the fire.
Indeed, it was ultimately the condiments that I tasted rather than the meat. There wasn't much of the usual banchan either. Still, I had fun grilling things like the seaweed, and was happy to eat it all. I'm just not sure what what the big deal was about the aging, as I couldn't taste it, and the meat wasn't that tender either.
