Merle Huîtres & Coquillages at Les Halles de Lyon Paul Bocuse

Belon Oysters

I told you that I could keep nibbling on shellfish at Les Halles. After that tour finished, I stuck around for a beer or two and then walked around further to check out the other stalls. That's when I noticed that this oyster shop had Belon oysters (among the many very impressive varieties on display). I had to take advantage of this chance to get a half-dozen of these flat round things, which were deliciously briny with a bit of mineral taste. I definitely prefer these little guys over bigger meatier varieties.
