One thing that we were told to get while we were up here
in Shantou was the local goose liver, or
gor kwa. Amusingly, it rhymes with
foie gras, and obviously I was hoping that the taste would be similar too. It wasn't. It tasted like your everyday liver, even if the taste wasn't as pronounced as it could've been. Perhaps more interesting were the cuts of heart and intestines in here, as they hardly carried any scent of
offal, to my surprise. I'd much rather eat those.
