Somehow I never noticed this on previous visits, but these guys have a crispy shengmian noodle option. I got that version today and I liked it. The noodles had a relatively firm texture despite the sauce covering it, and the noodles had that tinge of instant noodle-like guilty pleasure to it. The sauce was thinner than the one used in the hor fun version, presumably both deliberately done that way by the kitchen as well as a function of those rice noodles releasing starch. The meat was disturbingly slippery with tenderizer in there, but it also made it easy to eat. It was nice that the sauce had a bit of spice to it too; I actually drank the sauce down to the last drop.
