Shantou's Baheli Beef Hotpot in China

This hotpot place from Shantou has an outlet near our hotel in Shenzhen tonight, and it was good, especially because of the quality of the beef, which was hearty yet tender. And yes, it was hand-sliced at room temperature like they do in Shantou, not the frozen machine-cut style that is otherwise common across Chinese hot pot. We of course had their beef balls too, which were extra firm yet with juicy fat inside. My celery and shacha concoction at the condiment station turned out a little sweet, but at least I was also able to make it rather ginger-centric. I was ready to burst when we left.
