Japan's Chiyoda Sushi in Singapore

I never would have thought this given its generic takeout kiosk appearance, but the Chiyoda Sushi stall in the basement of Plaza Singapura (68 Orchard Road #B2-56) is actually a chain from Japan. I mean, it just looked like any other takeout sushi place. There were a few interesting things lurking in the spread though, including not just seasonal specials like the iwashi sardines above, but also the saba bozushi in the background. The latter was a lot like battera from Osaka in that it was pressed sushi with vinegared mackerel. But apparently bozushi is more of Kyoto thing instead and uses thicker cuts of fish, if I understood it correctly.
