Xiao Yin Mao Sour Soup Hot Pot in Singapore
At first glance, this place at New Tech Park (151 Lorong Chuan #01-22) looked like a typical Chinese hot pot chain. Upon closer inspection though, I realized that these guys serve Guizhou food, and more specifically a sour broth from the Ming minority group there.
That single serving bowl above featured that suantang broth, which included tomatoes but tasted more like a tom yam soup. I didn't care too much for the fish that they used, but this was affordable and I liked it enough to finish, along with those ribbon-like pickles on the side.
Perhaps more interesting was that baojiang tofu on the wooden tray in the background. The tofu was produced using an alkaline water that made the inside creamy, both from a texture perspective as well as a rich taste. I've definitely never had anything like that before, and it was very cool to try.
