This isn't the
chain from Vietnam, but instead a small two-outlet chain in San Jose that looked a little commercialized. But it was better than I had feared, featuring a decent but tame condiment platter and broth. Interestingly, they had a
"fresh" noodle upgrade available, but that's a downgrade for me as I'd much rather have those firmer skinny rehydrated ones instead. I wonder if they have off-menu options for things like
marrow.
