I finally got around to trying more at
Niu Honghong, this time being their classic beef noodles. It was pretty good, including everything from the broth to the beef to the noodles, even though one doesn't get to choose their noodles like at
Shejianjian. Most importantly, they got the chili oil right (although note that it's behind the counter, so you have to ask for it). I won't get their
chuanr again though; it was very tender, but it was slow and slightly sweet while lacking cumin and chili. Plus, it was only available in beef form.
