I'm not sure how true to form this is, but it was on the Restaurant Week menu at
Shabestan during lunch today. From what I could make out, this is supposed to be a beef kebab from Aleppo, but it sure struck me as being very similar to
Persian koobideh given not just the shape of the minced meat, but also the long grain rice,
sumac, and grilled tomato that they garnished it all with. I was happy with everything we had either way, including the tomatoey
bamieh stew as well as the
moutabal mezze to start.
