That may look like an unremarkable bowl of noodles that you could get at a typical
Chinese restaurant in the US. But I was happy to find that these "Dry Mein" noodles were cooked extra firm, giving it a wonderfully chewy texture. They were also coated in a generous amount of oil, while the broth was crisp and salty. This old school place is apparently quite an institution in
Maui (1750 Wili Pa Loop, 808-244-7124) and I'm happy to have stopped by.
