The Tori Ajitama-Uma from Bari-Uma Ramen

Tori Ajitama-Uma

Wow, I haven't been back to Bari-Uma in like seven or eight years. I'm not sure if this is something that appeared on the menu during that time, or if I just forgot about it, but they have a chicken-based broth available if you don't want to go for their usual tonkotsu. I liked it more than I thought I would too, as it came with a luxurious layer of chicken fat on top to not only make it tasty, but keep it piping hot. The broth was savory and also earthy thanks to a good amount of fried shallots in there. Plus, they kept the noodles nice and firm. The only letdown was those gigantic (at least a centimeter thick) slices of chicken, which were rather boring. But I'd drink the soup again.
