Chuan Hung Noodle on Telok Ayer Street, Singapore
The folks at Birds of a Feather have opened up this noodle shop (51 Telok Ayer Street #01-01, 9755-1058). Braised beef noodles were the first thing on the menu, featuring some impressively tender meat. But perhaps more interesting was this ox tongue noodle in a deceptively clear-looking broth above. The broth was potent and bursting with spices like Sichuan peppercorns. I liked it, even if the use of chickpeas was a bit odd (fortunately, I like chickpeas). And I'm not sure what the big deal was about those Mianyang rice noodles. They were fine, but I wouldn't have even noticed them no one had mentioned it.
