Phở Ý #1. This time, I made sure to order that plate of raw meat that I saw everyone getting last time. From what I could tell, this was the same
tái meat that you would usually get in the bowl, but now it's on the side so that you can blanch each slice individually to your preference. That generally got you a more tender and pinkish slice, even if it was too lean to be exciting.
