Alon Shaya’s Safta at the Source Hotel in Denver

Baked Cauliflower

A teammate told me about this James Beard Award-winning chef from New Orleans, who just opened up this Israeli restaurant up here in Denver (3330 Brighton Boulevard, 720-408-2444). And it was awesome. He had multiple versions of hummus on his menu, including one featuring blue crab and sweet corn, which gave it a wonderfully light flair that I'd never considered with hummus before. The baked cauliflower above was better than the one from Miznon, as it was more fragrant and naturally sweet. And I loved his ikra salatim, whose cheese came topped with wonderfully savory bursts of roe. Yum!
