Bushi Tonkotsu Ramen from Uma Uma Ramen
This lime, ginger, and white onion-topped bowl at Uma Uma sounded different. So I gave it a try, but I was let down, particularly by the broth, which wasn't as thick and earthy as I had hoped. That lime and ginger just didn't work well with it all either, even if the contrasting flavors were a nice idea.
What I was much more impressed with, on the other hand, was their chashudon, which featured delightfully smoky and fatty bits of pork sitting on top of rice and with the added sweet and stanky bite of chopped white onions on there. Next time I might just go straight for that.
