Kanshouku Ramen at the Metropolis in Singapore

Tonkotsu Ramen

These guys have been around for a while now, but I never tried it since it is closed on weekends. But then I noticed something about them making their noodles by hand. So today I hopped on the train and headed out here for a midweek lunch (9 North Buona Vista Drive #01-18, 6684-4033).

I didn't like it, and for one primary reason: the chashu was sweet. Sure, if it were Chinese char siew, I'd want it extra candy-like, but in Japanese chashu, this was very off putting, even if the aforementioned noodles were fine. I don't think I'll be coming back.
