Beng Who Cooks in Tanjong Pagar, Singapore
It's hard to forget a name like this. They serve modern interpretations of local food, and have upgraded from a hawker stall to a restaurant complete with an upscale omakase service at night (39 Neil Road, 9339-8445). But in the absence of dining service right now, they have reverted back to their old build-your-own bowls, which was pretty cool because then you can get a taste of several of their a la carte dishes in one go. I cleared that bowl above in minutes. It was a bit excessive in terms of oil and salt (reminded me a bit of Eddy's Kitchen), but that's exactly why it was easy to eat. It'd probably be even better when washed down with some of the beer that they keep in stock at the restaurant.
