I've only been to Chabuton once. I don't think I ever went back because there wasn't anything particularly memorable about it. But one of their new outlets was nearby today, so we went in for lunch, and I was surprised at how rich and creamy this tonkotsu shio broth was...all while still being thin in consistency. Yes, I liked it better this time, especially when paired with a bowl of rice. I shouldn't even bother with the noodles in the future, as just the broth mixed up with some rice was good enough for me.
