Beppu Menkan Japanese Noodle Restaurant

Chinnoike - 2 chilis

This place (originally at Far East Square, but now with a new spot at Suntec City Mall) is a ramen shop with a specialization in extra spicy broth (the logo has some devilishly-looking man on it). I don't think this is really from Japan (they seem to own a bunch of shops in Hong Kong and Thailand), but I kinda liked my "Chinnoike," with all the scallions, corn, and (surprisingly) tender chashu. Depending on the bowl you order, the broth can range from plain Kyushu broth, or you can start the chili ratings going from one to eight (and two is pretty hot already - jump to four and it starts to get a bit pointless as the heat from the chili peppers just overwhelms the taste...I can't even imagine what six or eight taste like). Make sure you add some sesame seeds on top for some extra character.
