As luck would have it, there is a
Xinjiang chain restaurant near my hotel here in Shanghai, which was great since I needed to eat quickly and then go back upstairs to get some work done. So I sat down and asked for some recommendations, which of course included some
chuanr as well as a dark sour rice noodle thing. But the surprise hit for me was that stir-fried dish above, featuring crispy strips of "tea tree mushrooms" and shredded beef. It was delicious, and went down great with some of the region's Sinkiang Beer too.
