Gomtang from Hadongkwan in Seoul, Korea
Our local team took me to an outlet of Hadongkwan today, an old shop from 1939 that specializes in gomtang, or a light beef rice soup. And it was f*ckin' awesome. The broth was delicate and savory, while the local high grade ("1++") Korean beef was delicate. One seasoned to taste with nothing more than salt, pepper, and green onions (yes, major dragon breath alert). And they'll even give you free refills of soup later. It reminded me a bit of kalbitang or seolleongtang, but was lighter and a bit more like Vietnamese phở given how thinly the beef was sliced. I'm definitely coming back here again; I think they might even be open for breakfast!
