Taiwan’s Torisan (Jitangsang) in Singapore

Signature Toripaitan Chicken Broth

A ramen shop from Taiwan has opened an outlet down here (116 Telok Ayer Street, 8966-0116). As the name suggests, the focus is on chicken. And the broth was pretty good, as it was crisp and clearly had been stewed for some time, reminding me of Shuang Yue or Lao Ma Ban Mian.

Actually, this dish was pitched as Japanese toripaitan, but that Taiwanese influence really exhibited itself with those gigantic cuts of meat that they use. Admittedly, I probably won't go back precisely because those big cuts of meat don't appeal to me. But I liked the firmly cooked noodles.
